How to make perfect Chole Bhature from scratch

Dough preparation

Combine refined flour, sugar, salt, baking soda, baking powder, and yoghurt. Knead into a soft dough with water, then let it rest for ten minutes.

Bhature shaping

Separate the dough, use a rolling pin to flatten it into oblong shapes, and apply oil to the top.

Bhature baking

Grease a tray, put the bhature on it, and bake it for 7 to 10 minutes at 180°C, or until it is golden brown.

Preparing the chickpeas

Use tea bags, water, and salt to pressure cook the chickpeas for seven to eight whistles. Throw out the tea bags and save the cooking liquid.

Making the spice blend

Roast the cumin and dried pomegranate seeds for two to three minutes, then finely grind them in a mortar and pestle.

Making the masala

In ghee, sauté the onions, green chillies, ginger-garlic-green chilli mixture, and cumin seeds until golden brown.

Adding tomatoes and spices

Add amchur powder, red chilli powder, coriander powder, chole masala, and salt to cooked tomatoes. Crushed spices should be added.

Final cooking

Cook for 7 to 10 minutes after adding the cooked chickpeas and thoroughly mixing. Serve with onion rings and garnish with coriander.
